Recipe: Quick & Easy Ricotta Pancakes & Caramalised Banana

My usual weekend breakfast usually consists of bacon, egg and toast. (who doesn't love some  good ol' #BAE on the weekend?) However, yours truly was feeling a little adventurous last weekend and decided to whip up some fluffy ricotta pancakes instead! Actually, the idea came by when I needed to grab some ricotta cheese for the meatballs I was making on Saturday (that's a separate post on it's own!), so I thought to grab extra for some ricotta pancakes on Sunday morning! #greatdecision

These amazing ricotta pancakes topped with caramalised banana and maple syrup takes approximately 20 minutes to make - the PERFECT choice to serve on a chillax Sunday morning!

Ricotta Pancakes & Caramalised Banana recipe

Ricotta Pancakes

Prep time: 10 mins

Cook time: 10 mins

Total time: 20 mins


  • Ricotta Pancakes
  • 2 whole eggs
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 cup gluten free all purpose flour
  • 1 cup full fat ricotta cheese (preferably deli bought!)
  • pinch of salt
  • 1 tbsp olive oil
  • Caramalised Banana
  • 2 ripped bananas
  • Sprinkle of coconunt sugar
  • 2 tsp ground cinnamon


  1. Separate the egg whites and yolks
  2. Combine the egg yolks with ricotta and almond milk in a bowl and mix well
  3. Slowly add in the gluten free flour, cinnamon and baking powder into the mixture
  4. On a separate bowl, beat the egg whites until they become foamy (arm muscles baby!)
  5. Then, fold the foamy egg whites into the ricotta mixture
  6. Heat the olive oil in a large frying pan and add in your batter*
  7. Cook the pancakes until golden and flip them over
  8. As for the caramalised banana, simply add the bananas into the pan over medium heat.
  9. Add in the coconut sugar & ground cinnamon when the banana is slightly gluey and cooked until banana is caramalised
  10. Top your pancakes with the caramalised banana and drizzle with natural maple syrup


* Do not spread them out into thin layers if you want to get the fluffiness from the pancake. You will get crepe instead! (Yes, I learned it the hardway!)
