Recipe: Homemade Meatballs Zucchini Pasta | Date Night Kitchen Adventures

If you have been reading Eat This Burn That for a while, you would have known that the boy and I like to cook! Hence, we decided to start a new series here called Date Night Kitchen Adventures :) Mr ETBT enjoys cooking rich food (think garlic mushroom risotto, pork belly, steak, chilli prawn churizo pasta... you get the drift) and yours truly prefer the healthier options so we have a good balance there! Today, we have homemade meatballs zucchini "pasta" or as the buzzword goes, "zoodles".

Date Night Kitchen Adventures: Homemade Meatballs Zucchini Pasta

Homemade Meatballs Zucchini "Pasta"

Prep time: 45 mins

Cook time: 30 mins

Total time: 1 hour 15 mins


  • MeatBalls
  • 500 g minced lean beef
  • 125 g deli ricotta cheese, drained (use deli style ricotta which is firmer)
  • 1 egg
  • 1/2 tsp of nutmeg
  • 1/2 cup finely chopped parsley
  • Salt and pepper to taste
  • Tomato Sauce
  • 2 can organic diced tomatoes
  • 2 tablespoons olive oil
  • 4-5 clove of garlic (only because we are obsessed with garlic!)
  • 1 brown onion
  • Salt & pepper to taste
  • Zucchini Pasta
  • 4-5 zucchini spiralised



  1. Combine and mix the beef mince, ricotta, parsley, egg, nutmeg, salt and pepper in the large bowl
  2. Shape into large balls (about the size of golf balls)
  3. Cook them over a grill pan for approximately 10 minutes or until it turns golden brown

Tomato Sauce & zucchini pasta

  1. Saute garlic and onion in the olive oil over a medium heat until soft.
  2. Add diced tomatoes and seasoned with salt & pepper and mix thoroughly.
  3. Simmer for 10 - 15 minutes until the sauce is slightly reduced.
  4. Stir in the spiralised zucchini pasta and turn off the fire*


* I personally don't like eating raw zucchini so instead of blanching the zucchini pasta. I think this is a better way to "cook" the zucchini pasta to make sure its not overcooked.


Based on my past zoodles experience, I think this is by far the best zoodles recipe I have done so far! Raw zucchini doesn't quite taste that good and blanch zucchini is a tad overcooked for me. Even Mr ETBT gave his tick of approval and you know how boys love their carb loaded pasta!
